Actually, archaea have histone-like proteins; see e.g. http://www.ncbi.nlm.nih.gov/pubmed/9783158. Bacteria don't have nucleosomes, but ChIP methods have been applied to them; e.g. http://onlinelibrary.wiley.com/doi/10.1111/j.1365-2958.2007.05781.x/full.
Yes, but that was not the question asked; the modified question is a different and much more general topic than @shigeta originally posed.
chromatin is just a level of histone organization that is apparently only evident in eukaryotes. i am not sure if the chromatin structure is even characterized. maybe that's a good question for someone to put up.
