You will probably want to get RefSeq when that option is available. Fasta sequence would be the genome reference. If you need to know where the genes are then you will need to get the GTF or GFF files. If you are using something like salmon to quantify then you will get the transcrpts file.

Don't take this the wrong way but you seem to be doing bioinformatics long enough that you should know answers to something as simple as this question.
