I want to know which journals (free and paid) give full-text documents in XML?

Have a look at Pubmed Central's Open Access articles. They are available as XML: http://www.ncbi.nlm.nih.gov/pmc/about/ftp.html#XML_for_Data_Mining

BMC series titles XML can be found here.

A small number of NPG XML files can be found here.

Both BMC and PLoS are included in a standardized format in PMC-OA, so this should be your first place to get OA full text XML.

Also, beware that many legacy PMC-OA articles (~20%) scanned from OCR or converted from PDF have a small XML file that only includes the abstract and meta-data, with full text of the article in the associated unstructured .txt files.

the articles from Plos are available as XML.

I give + 1 for Pierre because quickest response and accurate and still at 0. More over I like Plose cause they are also trying to make their papers alive using ActiveICM to make 3D protein representation interactive.
