I am running RFMix to identify ancestry segments on each of the 22 autosomes.

I have seen these types of results in human genetics/anthropological genetics papers/talks, where you have the 22 pairs of chromosomes and segments are colored to represent the individual's relation to different reference populations. I am not sure how exactly these are made.

Has anyone here made these kinds of plots (preferably in R)?

You could try the ancestry pipeline at https://github.com/armartin/ancestry_pipeline.
