I'm wondering where I can find examples of genomes and their corresponding reads

Genomes can be found at NCBI, UCSC, Ensembl.

Reads from samples from genome of your choice can be found at NCBI SRA or EBI SRA.

If you are referring to reads assembled into actual genomes those would be harder to find.
