How can I view the interactions between proteins in the STRING database, specifically the type of action one protein has on another? For example, how can I determine whether a protein activates, inhibits, or otherwise influences another protein?

STRING works with derived data, which means they don't do any analyses on their own. You may get some information by clicking on links within the STRING resource, but in general you will have to follow up on your protein pairs by researching other databases and reading the literature. Good old-fashioned detective work.
