It depends on the skills you want to demonstrate. For programming skills, make your code public on your web site or some repository-hosting service. If you want to showcase your scientific competences, then contributions to papers are still the most highly rated thing in academia but you can top that up by writing knowledgeable and insightful articles on your own blog.
